The Recipe is time tested and i have taught many to make this foolproof cake.The ingredients you will need are
Maida ( flour ) : 1 and 1/2 cup
Cornflour : 1/4 cup
Cocoa powder 5 tbspoons
Baking powder 1/4 tsp
Eno or soda : 1/2 tsp
Sugar powder or castor sugar 1 and 1/4 cup
1 cup Milk (mix coffee powder in this for flavor if u like )
3/4 cup sunflower or canola oil
1 cup curd
1 tsp vanilla essence
1 tsp lemon ( if you are using soda and not eno)
1/2 cup mixed dryfruits (like cashew,walnut, hazelnut,raisins etc)
The key to making this cake is
1.Keep all ingredients on room temperature.
2.Open a new Eno packet but you will need only half for this recipe .
3. Mix dry ingredients first and mix properly with a whisk.
4.Mix all the wet ones in a bowl and beat nicely
5.Add dry mix to wet mix in three portions. Do not overmix. Take care that no lumps are formed. I always use a wired balloon whisk.
6. Add dry fruits at the last after dusting them with 1 tsp maida. You can make muffins too in silicon moulds.You can use Borosil Tray or Tupperware Crystal Wave range of microwave proof vessel.
7. I usually use Multicook for 3/4 batter and with the leftover batter make a small cake in crystal wave or sometimes make muffins in silicon moulds.
8.On Microwave power high in my MW it takes 5 min to cook.Since all MWs have different power please check the rise of cake and insert a knife or stick to check the doneness . U will be happy with the result.
