  • Maida 2 cups
  • Baking Powder 1 1/4 tsp
  • Baking Soda 1/2 tsp
  • Sugar powder 1 1/4 cup
  • For Caramel..
  • 1/2 cup sugar granulated
  • 1 tbsp water to mix
  • 1/4 cup hot water to add
  • eggs white 4
  • eggs yolk 4
  • Vanilla extract 1 tsp
  • Marmalade or Jam 2 tbsp
  • Tea Masala or spice powder 1 tsp
  • Rum soaked fruits 2 cups or 3 cups

Rasgullas :Chhena Balls in Syrup

image1 Litre milk curdled using whey from hung curd . Yes i am getting better at improvising. Left the chhena for draining iwrapped n a cheese cloth and put in a seive with one ltr bottle filled with water on top of it as weight . After 3-4 hrs that what i get ….Above pic shows the chhenna texture i got .I mashed it on the kitchen counter for 5-7 min and got the desired smoothness. ( I used Nandini blue packet milk and after a boil added whey till the milk curdled. Strained it in the cheese cloth and ran some water over it to cool it down ). Made balls with the mashed chhena . Small and smooth.

imageIn a large vessel I put 6 cups of water and i cup of sugar. When the sypup started boiling i put my chhena balls in the hot syrup one by one. My vessel was large enough to hold all 15 balls i had made.

imageThe Chhena balls puffed up as you can see in the pic. I added some crushed cardamom in it too. Its a better idea to add fine cardamom powder but mine was spoilt when i opened it . 😦 Had not used it since long . Bad idea to keep it out. should have stored it in the freezer :((

Timed it to 15 min of cooking in light sugar syrup. Then did fresh water test . Yes the balls were done as they sat in the water and not float when put in fresh room temp water. Took them all out in a big vessel filled with water. Not on a plate as they may loose shape.

Added 1/2 cup sugar in the light sugar syrup and boiled for sometime . around 10-12 min. On high flame. I had used a lot of water so wanted to reduce some and also add sugar to the syrup. Cooled the syrup for 1 hr and added the balls to the syrup after squeezing water out of them.

The result was awesome and tasty. Do try it. Rasmalai trial next 🙂

Honey Chicken


Recipe as I made….

Around 400 gms breast boneless chicken
1 Large Capcicum
Honey 3 tsps
Soya Sauce 2 tbps
Red chilli sauce 2 Tbsp
Red chilli paste ( I made by putting 8 red chillis and 2 tbsp water in the microwave for 4 min and grinding together when cool )
Fresh ground pepper 1/4 tsp
Baking Powder 2 pinches
Fresh not store bought ginger -garlic paste 2 tsp ( GG paste as I call it )
Corn flour 4 tsps
Maida 4 tsps
Salt
Olive Oil for cooking
Marinating Chicken
honey 2 tsp, Red chilli paste 1 tsp, Pepper powder 1/4 tsp, Soya Sauce 1 tbsp, Red Chilli Sauce 1 tbsp, salt little as we will add in batter too.
Cut chicken in small pcs ,it will cook faster and taste better. I had cut bit bigger and learnt my lesson.
Mix chicken and marinate and keep aside for at least an hour , I kept overnight. I do things in stages….:P
Now prepare batter with….
corn flour, maida, 1 tsp GG paste, baking powder 2 pinches, and bit of salt.
Put a nonstick pan on gas and pour around 2 tbsp olive oil. Mix marinated chicken and  batter adding a bit water to coat all chicken.
Once you fry all chicken like that,keep it aside.
In the same  pan in whatever little oil is left add GG paste, soya sauce, red chilli paste 1 tbsp or more if you like very spicy …
once GG is done ….Add some honey. Put cut green capsicum and a bit salt  and cook for some time depending on your liking of crunchiness of capsicum .
Add prepared chicken , mix well , close lid for 2 min for flavours to say hello to each other and become friends …..: )
Serve hot….and after you get feedback on taste like praises,  kisses and whatever post your comments here too …..

 

 

The recipe was found by 9 yr old son on Youtoocancook . I followed most of it but had more chicken than required 300 gms. Did not alter rest of ingredients much though. My kids loved the taste . I will be making this often .

Banana Walnut Cake

Have started posting through my phone… Learning new things is my hobby you see !!
Posting my first recipe with pics in my phone library… So easy this way 🙂 feeling happy ….
Had lots of self raising flour … Result of my shopping without checking my pantry…. And also 1 big ripe banana tempted me to bake a cake today.
This was Nigellas recipe so simple had to make it …but it required 3 med bananas ….. I had 1 big …. So ….. So what I used my big one and added one more egg…
Good results i must say 😃👍

Mix butter, sugar and vanilla.

Add eggs and banana

Add milk.

Add SRF.

I added 1 cup ground walnuts.

Sprinkle some on top too . Gives very nice nutty flavor.

Bake at 180 C for 40 minutes. Cool and cut slices. I used Bundt Pan. Have posted both pics . Inverted and baked side up.

Orange Ginger Cake

Actually this is the recipe which I wanted to try.

orange ginger cakeAs I had never tried my hand on zesting (if there is a word like that ) Orange or lemon. I know it was not a rocket science but I had never done it and baked a cake with Orange juice and zest of Orange.So….just washed one good Orange and used my cheese grater and  here I go ….it was easy ! The thing to take care is not to apply a lot of pressure.
Orange ZestTo the above Tupperware recipe I  suggest you add 1/4 th spoon of soda-bi-carb in the Maida mixture. Instead of melted butter I used Canola Oil. Had to bake it for 30 min in a preheated oven at 180 degrees C.

I would also like to share that as soon as my batter was ready the power went off ! for half an hour I had to put my cake batter in the fridge….but thank god it came out fluffy and nice.
